Green Chile Corn Casserole
Ingredients
- 1 can of sweet corn
- 1 can of creamed corn
- 1 box of jiffy
- 1 cup of sour cream or greek yogurt
- 1 stick of melted butter
- Buncha shredded cheddar cheese (maybe a 1/2 to 1 cup?)
- Buncha green chile (pick spiciness)
Steps
- Drain the sweet corn and green chile (reserve the liquid from the green chile for use in a soup or stew)
- Mix everything (sweet corn, creamed corn, jiffy, sour cream/yogurt, melted butter, shredded cheddar cheese, and green chile) into a big mixing bowl and thoroughly mix together with a spatula
- Pour into a baking casserole dish
- Bake at 375 for 40-60 minutes, until golden brown on top
