Green Chile Corn Casserole

Ingredients

  1. 1 can of sweet corn
  2. 1 can of creamed corn
  3. 1 box of jiffy
  4. 1 cup of sour cream or greek yogurt
  5. 1 stick of melted butter
  6. Buncha shredded cheddar cheese (maybe a 1/2 to 1 cup?)
  7. Buncha green chile (pick spiciness)

Steps

  1. Drain the sweet corn and green chile (reserve the liquid from the green chile for use in a soup or stew)
  2. Mix everything (sweet corn, creamed corn, jiffy, sour cream/yogurt, melted butter, shredded cheddar cheese, and green chile) into a big mixing bowl and thoroughly mix together with a spatula
  3. Pour into a baking casserole dish
  4. Bake at 375 for 40-60 minutes, until golden brown on top
